Idiyappam and dosa are both rice-based, but they are cooked in totally different ways. Idiyappam is pressed into thin noodles and steamed, with no oil at all. A dosa is spread on a hot tava and cooked with ghee or oil. That one difference is where most of the calorie gap comes from.
